That’s somewhat true of most spoilers but not all. At the opposite extreme are the flat ones like pro-stock drag racers which do not ‘back up’ the air at all, and just use the low pressure wake to generate downforce.
I think you’re on the right path to maximize downforce given your class restrictions.
What I would do is find the angle from the top of the back window to the back edge of the trunk lid....then mount the 10” spoiler exactly perpendicular to that angle.

Pizza still works on carb and calorie restricted diets. Just gotta be smart about it. I'm not on a diet or restrictions right now. Just as long as I can maintain my current weight which is 10 lbs off of about 1 1/2 years ago. This summer I'll try to push for another 10 or so.
Can some of the potential buyers chime in about size restrictions for the classes you run?
For those of us who are unrestricted might want them as large as can be supported by the bodywork. And possibly from blind or bracketed support.
