GoinDrivin, I think you are in really good shape equipment wise for having done only one track day. I don't think you need any more parts with the exception of good track pads for the front brakes only. Call Optimum Performance, site sponsor, and they will help you choose.
The beauty of your new front Brembo calipers is that pad changes are an absolute breeze. Pick a modest level dedicated track pad that still has decent cold bite for street driving. You won't want to drive them daily - too loud and dusty - but you definitely can swap them at home and drive on them to the track. Same with 200tw tires. I use stock Ford pads for the rear brakes and don't bother changing for track days and I've never noticed any brake bias issues at HPDE events like what you are doing. If anything, using the stock rear pads will be too little rear bias, which is safe. I wouldn't bother with brake cooling, etc. until you get more days under your belt and the car isn't doing something you want it to do.
