Since its the season thought I would share my moms recipe
Oven 350
2 cups of flour
1 cup instant oatmeal
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup butter (solftened to room temp)
1 cup brown sugar
1 cup sugar
1 egg, slightly beaten
1 teaspoon vanilla
1 cup sold pack pumpkin
Combine flour, oats, baking soda, cinnamon and salt in one bow. In bigger bowl, cream the butter, gradually add sugars. Beat until light & fluffy. Add egg and vanilla.
Mix well. alternate additions of dry ingredients and the pumpkin. Mix well after each addition .
Drop 1/4 cup dough on lightly greased cookie sheet. Bake 20 to 25 minutes; until firm and lightly browned. Cool on racks
