What's required to install one of these on an S550? Do you have to remove the bumper, or can you just drop the air dam and access the crash bar from underneath?

On the S550 the front bumper is a 15 minute job to remove with one person. Remove the under tray, the radiator plastic cover, remove the screws on the forward side of the splash shields and you can access the screws that secure the bumper tabs under the head light assembly. I think they are 7mm IIRC. These are the ones everyone breaks the tabs off on. These cars really are very easy to work on. Then you have open access to the bumper.

I just realized that I never reported in on this install. It was my first time removing the bumper cover and the 40ish clips and screws, and so all together this project took me the better part of a day, including installing some Quik-Latch Mini's after I broke the bumper tab on the driver side.

Otherwise the install was fairly straightforward, and I'm happy with the results and everything seems to be holding up well. I didn't have a front plate mounted or any holes drilled by my dealer, and this was the only product I came across that provided both a front plate mount as well as a legit tow hook (plus the ability to quickly swap back and forth). Kudos to Steve as well for working with me on correcting a minor issue with the anodizing on one of the pieces.

I probably could have removed a little less plastic, but I erred on the side of caution so that I didn't have to worry about it rubbing anywhere if the bumper flexed:

And the final result - the hook barely clears but does not touch the paint beneath it:

Plenty of clearance for the front plate mount - IIRC this is one of the farthest settings from the bumper:
