guys ive heard talk on here that there is a method of switching off the seat belt alarm, can you advise?

switching off seat belt alarm

I'd think unplugging the sensor from the seatbelt would do the trick, it's on the latch side under the seat. if not go to a junk yard and cut the buckle off an old seatbelt and just plug it in.

Ignore the above post. Read your manual. There is a section that tells you how to disable it without unplugging anything.
Deactivating/activating the Belt-Minder feature
The driver and front passenger Belt-Minder are
deactivated/activated independently. When deactivating/activating
one seating position, do not buckle the other position as this will
terminate the process.
Read Steps 1 - 4 thoroughly before proceeding with the
deactivation/activation programming procedure.
Note: The driver and front passenger Belt-Minder features must be
disabled/enabled separately. Both cannot be disable/enabled during the
same key cycle.
Note: If you are using MyKey, the Belt-Minder cannot be disabled.
Also, if the Belt-Minder has been previously disabled, it will be
re-enabled during the use of MyKey. Refer to MyKey in the Locks and
security chapter.
The driver and front passenger Belt-Minder features can be
deactivated/activated by performing the following procedure:
Before following the procedure, make sure that:
• The parking brake is set
• The gearshift is in P (Park) (automatic transmission)
• The gearshift is in neutral (manual transmission)
• The ignition switch is in the off position
• The driver and front passenger safety belts are unbuckled
WARNING: While the design allows you to deactivate your
Belt-Minder, this system is designed to improve your chances of
being safely belted and surviving an accident. We recommend you
leave the Belt-Minder system activated for yourself and others who
may use the vehicle. To reduce the risk of injury, do not
deactivate/activate the Belt-Minder feature while driving the vehicle.
1. Turn the ignition switch to the on position. DO NOT START THE
ENGINE.
2. Wait until the safety belt warning light turns off (approximately one
minute).
• Step 3 must be completed within 30 seconds after the safety belt
warning light turns off.
3. For the seating position being disabled, buckle then unbuckle the
safety belt three times at a moderate speed, ending in the unbuckled
state. Step 3 must be completed within 30 seconds after the safety belt
warning light turns off.
• After Step 3, the restraint system warning light (airbag light) will be
turned on for three seconds.
4. Within approximately seven seconds of the light turning off, buckle
then unbuckle the safety belt.
• This will disable the Belt-Minder feature for that seating position if it
is currently enabled. As confirmation, the restraint system warning
light will flash four times per second for three seconds.
• This will enable the Belt-Minder feature for that seating position if it
is currently disabled. As confirmation, the restraint system warning
light will flash four times per second for three seconds, followed by
three seconds with the light off, then followed by the restraint system
warning light flashing four times per second for three seconds again.

Can anyone confirm/deny that this has to be done with stock seat/sensors? I have already removed the stock seat but kept the stock seatbelt stalk for now. Problem is my airbag light is always on (I don't care) so I kinda get lost at Step 4 since my airbag light is eternally on 
If I have to put the stock seat in for a second, no biggie. Or...I'll just short the seatbelt plug with something crude and let that be that.

If you disconnected the plug under the seat, which I am guessing you did since you have an airbag light, then yes you would need to reinstall the original seat with it's plug to do this. Going by memory but I think the plug is attached to the factory seat for the weight sensors, seat position and airbags. I think that doing this with the original seat is better then trying to short anything out.
