Wife left me alone for the weekend so I had a free hand for breakfast! Yes the bacon is underneath somewhere. Two whole slices!!
That's my kind of breakfast (at lunchtime)! Gotta love eggs with crispy edges! Funny, my wife was away last weekend and kinda did the same thing! Not all the different meats but 1/2 pound of bacon, 4 eggs and 4 toast 2 breakfasts in a row.

Sorry have not been around for a while. Everything is fine. Was doing the out of site out of mind thing with the track closure.

Anyways. Ran into a heleva deal at Wally World on clearance, $600 smoker for $250 and couldn't pass up. Maiden voyage last weekend, 4 racks of ribs . Purposely undercooked some so could pull and finish up in the toaster oven. The second photo is the trimmed off goodness. The "skirt" inside is like the best jerky you could ever have. Anyways. Makes for a good beater shirt! 20260923_181336.jpg20260926_104937.jpg20260926_144509.jpg20260926_172124.jpg20260926_183230.jpg20260921_180930.jpg

Brisket action with homemade mac and cheese. Had to cut in half to fit in the smoker. 16+ hours total time. Caught a stall for 5 hours at 155 internal temp and had to finish it up in the oven at 250 for 1.5 hours. Pulled at 203 and hour rest. It was only in the 40s and was going through the pellets. @Mad Hatter - Ya this smoker is going to make me fat. 20261014_180209.jpg20261017_041959.jpg20261017_205200.jpg20261017_205428.jpg20261017_205735.jpg
