Engine build. Big bore only or big bore stroker.

I finally found a FR500 block for my big bore build. Just found 8 NOS sleeves to start fresh. Now should I go 3.75 crank. This is more of a road rally car now and one or two track days a year. The rest of the engine is Ported Fr500 4v, Cams, Intake. Also looking for opinions on all the different stand alone ECU'S
