Yummy !! I like your take on the brats, haven’t seen that style !! Up here in Wisco, just grilled brats, onions, mustard on a Sheboygan hard roll is the standard here. They never disappoint for sure no matter how you serve them up.

There are several different ways at providing adjustment on a damper. It's tough to know whether your adjuster is a needle/seat adjuster or something that preloads a spring/shim stack...

I've always considered 5mm the minimum gap sidewall to anything.
