+1 on changing the brakes! The regular 14 discs on the S550 are with the vents on the outside!! So you cant efficiently cool them with ducts. Any decent disc will have the vents opening to the inside. You really can't do much with those discs. One fellow I know bought the BAER 2PC discs in the OEM 14" size so as not to change the 4pot calipers, it worked ok but for the money, your better off going to the bigger 15" setup with OEM ford discs for nearly the same money. The 15" Brembos work really really well.

Can I keep the rear stock and swap front to prembo and do rotors with inside facing vents not exist for the stock brakes?

would pp underbelly be enough to redirect the air to the vorshlag deflectors?

Yes, but it's not just the undertray. You have to change out the lip and some other parts.
We (Vorshlag) did it to our base model 2018.
