Do you know by the weight savings for the 3 carbon fiber body parts? Hood, doors, lid?

The savings are substantial, but dependon where you are starting from.

From stock parts that have not been touched it is 30 pounds for each door, 25 for the hood and 20 for trunklid. These are all approximate,

There is nothing prohibiting the use of Lexan, etc to replace the glass. Minimum thickness is not specified. 1/4" or 3/16" should be OK for the front, rear doesn't matter. Bracing will likely be required to prevent deflection at-speed.
