Oil is typically 190-200ish and water is 200-210ish.
E85 helps a bunch but I have done a number of things to help with cooling.
Big oil cooler, custom 3 pass/3 row aluminum radiator, (water crosses core 3 times on its way through) 32 psi radiator... (see full post)

What rear shocks are on your car? The shock at full extension determines the droop, so aftermarket shocks that are a bit longer than OEM might allow the suspension to swing lower causing the interference. To be clear, I'm grasping at straws now.
