I’m still on the stock lines and haven’t felt a need to change.

None. I don’t think the brake lines are going to affect fading. The SS lines compress less which can give you a firmer pedal when you are deep into it. Are you still using the stock pads? Pads and fluid are your first place to look if you’re experiencing fading.

I was only on the track for 30min until now.
It will be a bit more intense next year ...

That's why I wanted to make sure that everything is stable.

You'll be fine. I'm running Pagid RSL-29 pads and Motul 600 brake fluid. No issues for me but I'm not the hardest on brakes. Haven't seen many if any complaints or issues with the GT350 brakes. I recently drove a Porsche GT3 RS on track and the brakes are very similar in feel and performance. As long as you have the trans and diff coolers on your car you'll be good to go stock. You should check into these too.

If you're going to do 20 track days a year then yes, if only a few I'd consider waiting. Pads and good brake fluid would be a higher priority for me. Be sure to post photos of your car on those awesome European tracks. Which one do you run the most often?
