Finishing out the weekend with some 80/20 burgers with smoked Gouda…and homemade French Onion dip.

It seems that the 80/20 has the best flavor and taste even next to 85/15. I guess the extra 5% fat is the best. Great looking meal Patrick !!

Okay the finished product


Bacon wrapped stuffed pork loin. A chunk of pork loin butter flyed seasoned with rosemary infused olive oil, fresh garlic, salt and pepper. I cheated on the stuffing. A box of stove top savory herb spread over it. Then rolled and wrapped in Boars Head thick cut bacon before cooking over hickory coals in the big green egg. Pretty easy but tastes better than the standard pork chop.

Don't feel guilty about using stove top stuffing.........it's easy to make and tastes great!!!! I've been using it longer than I can remember, especially at Thanksgiving............

The new eating rage around these parts these days is the pickle sandwich.It originated at a deli on Long Island, NY. They take a good size Boar's Head dill pickle, cut in half and hollow it out and then add whatever you want to make your sandwich. The pickle is the crunchy alternative to using bread. I'm sure this will turn up in other parts of the country now that the secret is out....

Looks delicious !! Boar’s Head is big time up here in Wisco - our local piggly wiggly has a deli case 25 feet long with almost everything they carry including cheese. Good stuff !!

More blue kettle cooking !! Onions & mushrooms first, then a large thick cut T-bone and some pork tenderloins. Paddock queen fried up some taters to blacken status !! Yum Yum folks !!

The only oriental cuisine I had growing up was La Choy chicken chow mein over rice with those crunchy noodles on top............don't forget the La Choy soy sauce!!!

A friend of mine owned a Chinese restaurant and when I went back in the kitchen the food for the patrons was nothing like what the Chinese workers ate
