Hmmm...Holly has a leftover filet from Saturday....

After I browned the meat off on one side I threw the cheese right on top and let the run off brown and caramelize.

Lovely !! Burger that gorgeous needs no red or yellow goop for sure !! Butter on both sides of that bun young man, sometimes the buns get dry !!

There was so much delightful butter and olive oil in the onions it was dripping off! I couldn't even think about adding an additional. The buns were lightly buttered. A few slices of slab bacon would have taken them to a different level though.

Been a minute since I fired up the smoker and cooked a brisket, I got the urge this week so I defrosted a 22# wagyu and loaded it up!
While I was at it, I took the fat trimmings and rendered a quart and a half of liquid gold tallow
