I have no suggestions on how to cook peasants and I was unaware that was allowable in Illinois?
Although little is allowed in Illinois, they have not made eating birds illegal, yet. Don’t give them any ideas.

Birds were taken in Wisconsin.
 
So, my stepdad raises pheasant for hunting clubs. I learned the best method is it needs fat to keep it from drying out. Wrap the breasts in fatty bacon…completely. Then you can bake or roast like chicken breasts. Cook them quickly. This will also help keep them from drying out.

I also deep fried a whole pheasant in my turkey fryer once…peanut oil. It was fantastic. Don’t let the oil get too hot…like no more than 300°F. And it will cook really fast too because they just don’t have a lot of mass to them.

Bake at 350°F with a probe until 165°F. Don’t overcook it.
