At the risk of rustling some feathers, HPDE is no where close to class racing. There are guys running HPDE who can't drive a nail with 7 liter engines in their Camaros and they think they are king of the street. This had become apparent over the years at.. 1. A Porsche event where our Grassroots Motosport 2006 challenge V6 mustang (even with the crappy suspension) set second fastest time behind a Subaru WRX. This was against all the zoomy fat tired winged 964728..whatever cars. The second was when we had a track day with the BMW in the old Grand Am days, when the BMW was being worked on, the driver was running around the track in a Miata, several drivers commented on how fast the Miata was.. it was just a Spec Miata car. So HPDEs are fun, a great way to hose money away ,but in measuring performance they are abstract.
Find what class some of those cars would run in the SCCA or NASA and they would fall into T1 or GT2, where they would end up slaughtered because those class racers have incrementally tuned their cars to the point where they are much faster than they really should be. This is what happened when the GT4 program was introduced and they had trouble keeping up with 5 year old, stick shifted Boss 302s, even though the GT4s had paddle shifters, sequential boxes, ABS and launch control, plus, independent suspensions. They were remarkably slow until later in their development.
Corvette vs Mustang, yes the vette is faster, it should be, there's no reason for it not to be, but when it comes to working on it, maintaining it and just having fun behind the wheel, I'd take the S197 mustang.. no brainer.
HPDE will never be class racing, so you can't compare the cars at a track day, it makes no sense.
