Love this time of year in New England. Spring letting go & summer not in full swing yet. You can gage it by how often the AC needs to be turned on.........so far, not yet. There have been June's in the past that were very hot & humid, so I'm counting my blessings. I know those days will be here soon enough.
 
Wife saw my Daytona post and felt I may have offended someone. That was not my intention( I know we all have thick skin here on this site.). ;D..Second, as a fellow Pollock I was happy Brad finally got his first win at Daytona. Lastly I love me some kabasi with horseradish and a side of potato salad & a dill pickle...this time of year, a corn on the cob would round it out....umm...

Howsabout some sauerkraut Pierogies and Potato pancakes to go with that Kielbasa?
 
reading this thread is making me hungry.
corn in nj is about 2 1/2 feet tall. should be ready in couple of weeks. we could use some rain.
Summer is a good old time for great tasting food, beers and friends.

Grill the Kielbasa (Split) on the grill.

Fry the Kraut filled Pierogies with onion and sprinkle with rye seed.

Fry the potato pancakes and serve with a generous dollop of sourcream.

I'm Irish but this was pretty typical of how my Polish step father would cook.

Finding the Kraut (cabbage) pierogies ain't easy these days. Mostly you'll find potato filled ones.
